Brighton Fish Sales Masterclass

Blatchington Mill Year 10 GCSE Food students were recently given a Masterclass in fish by Jason from Brighton Fish Sales.

During the session, students were shown the wide range of fish that are caught from around the South coast from dogfish to welks, sea bass to octopus and even a whole monk fish. Jason talked to the students about the qualities to look for when buying fresh fish to reinforce the students' previous theory lesson. He then demonstrated the filleting process of beautiful fresh sea bream.

Over to the Year 10 students who were looking forward to giving it their best efforts. They were each given a sea bream which they filleted and pan fried. Jason supported students throughout the session, giving advice and guidance where necessary.

Students have been working hard over the last few lessons on food presentation and styling and today they did not disappoint. They used an Asian inspired marinade of lime, honey, soy, garlic, red chilli and ginger and garnished with curled spring onions, served on a bed of wild rocket salad.

As you can see from the pictures, the students gave it their best efforts and produced some excellent results. Jason was impressed with how engaged the students were with the task.
